Roasted Herbed Tomatoes

As any great chef knows, fancy doesn’t have to be complex. With just a few fresh tomatoes and a couple of common spices, this recipe can produce a savory delicacy that tastes equally excellent all on its own, or as a topping for salads, sandwiches, or pizzas. 

Ingredients:

  • Roma Tomatoes, cored, cut in 1/2 lengthwise - 5 Lbs.
  • Black Pepper, ground - 2 Tbl
  • Fresh Thyme, chopped - 4 Tbl
  • Garlic Powder - 3 Tsp (s)
  • Salt, kosher - 2 Tbl
  • Phase, LBA - 3 Cups

Preparation:

  1. In a clean bowl mix all the herbs, spices, and Phase ingredients together and combine well. Then gently fold in the tomatoes to combine well with the seasoned Phase.

  2. Place the tomatoes on a grate with a sheet pan underneath. Bake In the oven at 350F degrees for 30 minutes.

  3. Let the tomatoes cool completely and place the tomatoes in a clean storage container.
