Kalamata Olive and Cucumber Relish

Flavored with kalamata olives and diced cucumbers, your customers will truly relish this delightful condiment. It’s a good thing the prep time is short because you’ll be making a lot once the word gets out.
Ingredients:
- Marie’s® Italian Vinaigrette - 1 Cup
- Kalamata olives, chopped - 1 Cup
- Tomatoes diced 1/4" - 2 Cups
- Lemon juice, fresh - 1/4 Cup
- Cucumber, diced 1/4" - 2 Cups
- Feta cheese, crumbled - 1/2 Cup
- Salt and pepper mix - As needed
- Basil, Fresh, diced small - 1/2 Cup
Preparation:

Mix all the ingredients in a clean bowl and combine well.

Place In a clean storage container and hold for service in the refrigerator until needed.
Serving Suggestions: Good to serve over fish or shrimp, or use it with hummus.
